What I Ate Wednesday #2

Happy WIAW! This week I complied my favorite munchies throughout the week.

Let’s begin shall we?

There were a few rookie breakfasts this week.

Breakfast tacos are my all time favorite breakfast food. Scrambled eggs with red pepper, green onion, & serrano peppers (we like things spicy around here). Topped with avocado, fire roasted salsa, & a sprinkle of cheddar cheese. Wrapped up in a whole wheat tortilla.

And some MVPs.

Per usual, snacks were consumed habitually. They usually involved cheese.

I’m not really a protein bar fan due to the fact the majority are whey flavored candy bars. However, I do like this brand. It only contains 5g of sugar for the whole bar & fills me up when I’m in a pinch. The peanut butter flavor is the best. They’re good on occasion.

Lunches were a blur …except when I made hummus

Roasted carrot & ginger hummus. Delicious smeared on top of crackers, raw veggies, pita chips, bread, & even salads. It’s good on everything really. Get the recipe here

I got to use my stand mixer!

I always feel swanky when I use this guy. I wish I used him more than I actually do.

I used him to make cake batter with this:

Melted Unsweetened 70% Ghirardelli Cacao.

And frosting like this:

This is THE BEST frosting ever. It’s not in your face sweet like buttercream nor is it thick & crusty. It’s light & fluffy. It’s sticky like marshmallows & shiny like meringue. It’s a 1960′s throw back. I can’t describe the awesomeness that is THIS frosting.

It all came together to make this:

I only got to eat the parts that got cut off during the layering process  (which ended up being a perfect portion anyhow). This cake was made for someone’s birthday at my Mom’s office. It was a Devil’s Food Cake on the inside. I like to call it “Ding Dong Cake” because that’s what it tastes like. Don’t know what Ding Dong’s are? How about Ho-Ho’s?

There were plenty of salads including my new obsession that involves poaching eggs & putting them on top of salad greens & whatever other veggies are lurking around in the fridge. Yes, I am aware of my run-on-sentence problem.

Warm egg yolk makes amazing salad dressing.

Avocados made frequent delicious appearances.

They also make an amazing pasta sauce when whizzed up in a food processor with herbs & garlic.

  3. What a cute kitchen aid! Mine is just a plain cream color – so lame. I love breakfast tacos too. I think it must be a Texas thing or something. I’m definitely going to try out that hummus recipe because it looks amazing.

    • Oh I bet the cream one is pretty. Sometimes I wish my kitchen aid was a plain color so when I have my “dream” kitchen it will go with whatever color palette I chose. Wishful thinking! :) And yes! It’s def a Texas thing. My mom doesn’t understand the appeal and she’s from up north.
