Introducing: What I ate Wednesday!
One of my favorite things to do, aside from eating, is reading other blogs. It’s inspiring, fun, & you get to learn about awesome people. I have a whole list of blogs I check in on from time to time. Heck, it’s what fueled my interest in creating Spicy Sweet and Petite in the first place!
Today I want to mention a new blog I recently discovered. Peas and Crayons is an eclectic (food & design) blog created by Jenn. She’s also a dietetic major so her passion for food/healthy living shines through in her posts. Jenn found a unique & interactive way for fellow food geeks to get together & link up over the Internet. “What I ate Wednesday (WIAW)” is her brainchild. Want to learn more? Check it out here.

So without further adieu…
For my first edition of WIAW I’ll start simple with “What I ate Yesterday” …

I love my Keurig. Donut House’s Chocolate Glazed Donut coffee is amazing. I usually wait 30 minutes after coffee to eat.

Looks gross & weird…but delicious. Nonfat greek yogurt with sunflower butter (from Trader Joe’s), chia seeds, & a sprinkle of Barbara’s High Fiber cereal.

I try to get in one of these smoothies a day. It doesn’t always happen, but I try. This is a spinach, kale, banana, & frozen antioxidant berry blend with almond milk. You can get these frozen berries at costco.

My boyfriend was home this week so we had to run some errands before he left again on Wednesday (he works in the oil/gas industry & is home a week at a time). I brought my smoothie to go even though it didn’t have a lid. Which was an issue. Don’t worry it didn’t spill. Even though SOMEONE was convinced otherwise…

Lunch was at Schlotzskys since we were out & about. Normally, I hate fast food type places but they have a pretty darn good veggie sandwich. I was craving a caeser salad so I got one on the side. It came with these giant pesto/bread/pizza wedges. I didn’t eat those or the croutons. The caesar salad was ok…considering it was a creamy processed dressing. I probably will be skipping out on the salad next time. I’d rather just have another half of the sandwich.

Tomato, red onion, black olives, cucumber, lettuce, sharp cheddar cheese, & a dill sauce. I always get it on wheat bread. I love it.
Ok, so here I failed to photograph the spoonful of sunflower butter I ate when I got home…

Dinner was a big salad of baby kale, spinach, carrot, red pepper, green onion, & blue cheese crumbles. We made a vinaigrette out of avocado so there were chunks of it throughout. Yum.

We went to a seafood distribution/warehouse in San Antonio called Groomers on Monday & bought a bunch of Prince Edward Island Mussels that were on sale. We had people over on Monday & cooked them. We made the leftover mussels to go with our salads. The broth was made with shallots, white wine, crushed tomatoes, oregano, & garlic. We topped it with green onions. They were so good. The broth was lopped up with crusty bread. If you’ve been following my posts, you know I sort of a have a thing for seafood…
I ate a frozen piece of peppermint bark before I went to bed.

Your breakfast does not look disgusting! It looks really delicious and I kind of want it. I think the best foods are the ones that look weird. Also those mussels looks so good. I have a recent love affair with mussels when I was in Seattle for winter break. Deliciously good.
The sunflower seed butter really makes it! I love all seafood & can’t get enough of it.
Haven’t tried that k-cup yet for my keurig but I totally have to try it soon!

Hmmm, how is that coffee? I saw some in Target and was really intrigued! I don’t have a machine, but I may think of investing in one soon since I tend to drink coffee on the daily!
Honestly my keurig is one of my favorite kitchen appliances. It makes the PERFECT cup of coffee everytime.
